- Place 2-3 strawberries in a highball glass and crush them gently until no large chunks remain.
- Pour in the lime juice and sugar syrup.
- Take a handful of fresh mint leaves (about 12) and clap them between your hands to release their aromatic oils, then add to the glass.
- Lightly press the mint leaves with a muddler—avoid crushing them heavily, as this can introduce bitterness.
- Add the rum and fill just over halfway with crushed ice.
- Stir thoroughly to combine.
- Top with soda water and fill to the rim with crushed ice.
- Insert a straw and finish with a mint sprig and strawberry (position the mint near the straw so its aroma reaches your nose with every sip).
