While planning the Winter/Spring 2016 cocktail menu for Loyal Nine, I sought to create some low-proof options. Inspired by Michael McIlroy’s Rome With a View and our ample supply of Avèze gentian liqueur, I decided to swap out Campari with this bitter French liqueur. Recalling the Square Root's blend of Aperol, gentian, and citrus also sparked ideas for flavor combinations. Considering passion fruit’s compatibility with bitters, I thought about a tropical twist. The name Italian Stallion emerged from pondering Roman themes and kitschy movie titles. In 2020, this drink made its way onto the menu at Paper Plane in San Jose, California, under their guest cocktail section.

Instructions

  1. Combine the ingredients with ice and shake well.
  2. Strain this mixture into a Collins glass that already has 2 ounces of soda water.
  3. Pack the glass with ice cubes, insert a straw, and finish by twisting an orange peel over the drink as a garnish.
