Instructions

  1. Pour the Scotch into a rocks glass and add three ice cubes taken straight from the freezer, with no meltwater on them. Stir.
  2. Add the demerara syrup and Peychaud's bitters, plus two more ice cubes.
  3. Stir again, then add two more cubes.
  4. Stir once more. If there is room in the glass, top up with extra ice.
  5. Garnish with a lemon zest twist.
