First you need to make the kawakawa tea and simple syrup.
Kawakawa simple syrup:
1 cup white sugar
1 cup water
8-10 kawakawa leaves
Bring to a simmer, take off the heat and let leaves steep for 1hr.
Kawakawa tea:
Add 5-6 leaves to a 500ml of water and bring to a simmer. Turn the heat off and allow tea to steep for 15min. Remove the leaves and strain into a jar or small jug.
Instructions:
Add all ingredients to a shaker with ice, and strain into a chilled glass
