Ingredients: 1 Egg White; 30 ml Aperol; 1 twst Orange Peel; 23 ml Lemon Juice; 45 ml India Pale Ale; 23 ml Gin

Gin and Aperol shaken with lemon juice, egg white and a measure of India Pale Ale. The bitter orange is softened by a silky foam and a hoppy edge. Served in a coupe with an orange twist.
