In 1869, William emigrated from Hamburg to Chicago. After surviving the Great Chicago Fire, he led a team of 16 bartenders at Tivoli Gardens by 1873. In 1884, William relocated to New York and managed the Bridge Saloon near the Brooklyn Bridge, which was later demolished for bridge expansion. In 1889, Schmidt took his first vacation back to Hamburg to see his aging parents. Upon returning, he went solo with a business partner and opened an establishment on Broadway close to Park Row. When his partner passed away shortly after, William sold the place but stayed as bartender through multiple ownerships until it moved to 58 Dey Street. This spot now lies within Ground Zero. Schmidt passed in 1905.
