In a cocktail shaker, combine the gin, lemon juice, simple syrup, and egg white.
Perform a 'dry shake' (without ice) for 15-20 seconds to emulsify the egg white and create a frothy texture.
Add ice to the shaker and shake again for another 15-20 seconds to chill and dilute the cocktail.
Strain the mixture into a chilled highball glass.
Top with club soda to create a fizzy head.
Garnish with a lemon wheel and a straw.
