Gilded Paloma

A long, citrusy tequila drink: grapefruit, pineapple and lime juice, with cinnamon syrup adding warmth and club soda lengthening it. Shaken and served in a highball glass with a grapefruit twist, created by Frederic Yarm at Drink in Boston in 2022.
The Gilda, created at Death & Co. in New York with blanco tequila, pineapple, lime and cinnamon, grew popular enough at Drink in Boston that other bartenders began serving it. When a guest asked for something along the lines of a Paloma, Frederic Yarm combined those ingredients into a new drink. The working name Gilda Paloma gradually turned into Gilded Paloma.

- Combine all ingredients except for the soda water and grapefruit twist in a shaker filled with ice.
- Shake well.
- Strain this mixture over ice into a Collins glass.
- Top up with approximately 2 ounces of soda water.
- Garnish with a twist of grapefruit.
