At Drink, I introduced a cocktail called the Gilda, which became so popular that other bartenders started serving it too. The original Gilda was born at Death & Co. in New York and features blanco tequila, pineapple, lime, and cinnamon. One evening, when a guest asked for something like a Paloma, I blended these elements to create a new drink. Over time, the name evolved from "Gilda Paloma" to "Gilded Paloma."
