Instructions

  1. Combine gin, Aperol, citrus juices, honey syrup, four to six mint leaves, egg white, and a dash of bitters in a shaker.
  2. Agitate vigorously without ice for about 30 seconds until it becomes frothy.
  3. Pack the shaker with ice cubes and shake again for another 30 seconds.
  4. Pour the mixture through a strainer into a fizz glass filled with no ice.
  5. Lightly mist the top of the drink with rose water and finish by adding a sprig of mint that has been gently bruised to release its aroma.
