The Gadsden Purchase refers to an expansive 29,670-square-mile territory in today’s southern Arizona and southwestern New Mexico. The United States acquired this land through a treaty signed on December 30, 1853, negotiated by James Gadsden, who was the U.S. ambassador to Mexico at the time. My chef, hailing from that region, brought the name to my attention during one of our research sessions.
