Instructions

Prepare sugar syrup if needed or dissolve 3 teaspoons of granulated sugar in 3 centiliters of water. Mash strawberries through a steel mesh strainer or chinois into a bowl to extract juice thoroughly. Use the back of a spoon for maximum extraction; expect about 2 deciliters from 350 grams of fruit. Squeeze fresh lime juice. Crush ice and set aside in a container. Combine rum, lime juice, sugar syrup, and strawberry juice in a blender. Gradually add one deciliter (approximately 4 ounces) of crushed ice at a time while blending until the mixture is smooth and slushy. Serve in glasses and garnish.
