Cut and seed a watermelon, reserving six balls for garnishing or setting aside one quarter slice for serving. Freeze the remaining pieces after chopping them into roughly 100 grams each.
Squeeze fresh lime juice.
Crush ice using an ice crusher or blender and set it aside in a bowl.
Combine rum, lime juice, sugar syrup, frozen watermelon chunks, and crushed ice in a blender.
Blend until smooth, adding Vichy water gradually if the mixture thickens too much. This helps achieve a more fluid consistency.
Continue blending for about 30 seconds to ensure a thick slush texture.
Taste and sweeten with extra sugar syrup as necessary since watermelon sweetness varies.
Carefully pour into glasses using a spoon to prevent overfilling. Garnish each glass with the reserved watermelon balls or slice.
