- Pour the simple syrup onto one small plate and the crushed candy canes onto another.
- Turn the rim of a coupe in the syrup, then in the candy canes, until it is evenly coated.
- Fill a shaker with ice and add the blue curaçao, peppermint schnapps and pineapple juice.
- Close the shaker and shake hard until it is well chilled.
- Strain into the prepared coupe.
- Top with Sprite and serve straight away.
