- Fat-washed whiskey:
- Pour a bottle of Jack Daniel’s Old No. 7 into a pan with 200 g duck fat and warm it gently until the fat has melted.
- Let it cool until it can be poured into a sealable container, then freeze it so the fat sets and can be strained off.
- Strain out the fat and pour the whiskey back into its bottle.
- Pear & honey posca:
- Peel 5 pears and simmer them with a bottle of white wine and ½ cup honey until the pears turn translucent. Strain through a coffee filter and bottle.
- Tansy & pisco tincture:
- Steep 5 tablespoons of tansy in 200 ml pisco for 3 days, or keep it in a water bath at 55 °C for 3 hours. Strain through a coffee filter.
- Walnut garnish:
- Roast walnuts with sea salt in a pan over low heat for 15 to 20 minutes, then fill a paper cone with them.
- The drink:
- Chill a coupe.
- Stir the fat-washed whiskey, pear & honey posca, tansy & pisco tincture, blood orange liqueur and Fernet Branca with ice.
- Strain into the chilled coupe and peg the walnut cone to the rim.
