A shaken drink by Kyle Davidson of Violet Hour in Chicago, from 2009, built mostly on Pimm's No. 1 Cup with gin, lemon juice and a little simple syrup. Peychaud's bitters and a Cynar rinse add a bitter, herbal edge. Served in a coupe.

Instructions

  1. Combine ingredients in a shaker, using slightly more simple syrup than half an ounce.
  2. Swirl a chilled stemmed glass with Cynar, retaining some at the bottom if you prefer.
  3. Vigorously shake but avoid overmixing due to Pimm’s lower alcohol content.
  4. Pour into the prepared glass and add several drops of Peychaud’s as a garnish.
