Instructions

  1. Place thyme and rosemary leaves in a mixing glass after removing them from their stems.
  2. Express the herbs into the glass first.
  3. Add the liquors, egg white, cream, and two dashes of bitters.
  4. Dry shake without ice.
  5. Then add ice along with lemon and lime juice, shaking until well chilled.
  6. Strain twice through a fine mesh into a rastal-style tall goblet.
  7. Allow to rest for 15 seconds to form the meringue layer.
  8. Top off with club soda to fill nearly to the rim.
  9. Garnish with thyme and rosemary sprigs and three dashes of bitters.
