- Place thyme and rosemary leaves in a mixing glass after removing them from their stems.
- Express the herbs into the glass first.
- Add the liquors, egg white, cream, and two dashes of bitters.
- Dry shake without ice.
- Then add ice along with lemon and lime juice, shaking until well chilled.
- Strain twice through a fine mesh into a rastal-style tall goblet.
- Allow to rest for 15 seconds to form the meringue layer.
- Top off with club soda to fill nearly to the rim.
- Garnish with thyme and rosemary sprigs and three dashes of bitters.
