At Loyal Nine, I created the Fiji Mermaid cocktail by blending elements of two Tiki favorites: the Bourbon-heavy Port Light and the rum-centric Test Pilot. The drink's name comes from a sideshow attraction featuring a monkey’s torso attached to a fish tail. This oddity was bought by an American captain from Japanese sailors in 1822 and later showcased by P.T. Barnum in 1842, though it likely perished in a fire. Despite the original's disappearance, replicas kept the legend alive.
