Instructions

To create lilac syrup, gather fresh lilacs and strip off all stems. Combine with an equal measure of sugar and water, then heat slowly without boiling for about two hours or simmer briefly, turn off the heat, and let it steep overnight. Strain out the solids. If you want to can the syrup, mix in 1/3 cup lemon juice per 6 cups of syrup to reduce the pH. To prepare the cocktail, follow the French 75 method.
