Original recipe:
Shake 20ml M&S lavender gin with 20ml elderflower cordial, 7.5ml chilled water, one medium ice cube, and four drops Angostura Bitters.
Strain into a chilled martini glass. Top with chilled Merchant's Heart Hibiscus Tonic. Garnish with sprig of thyme.
Adapted recipe:
In a clean, covered container, infuse thyme and hibiscus for one hour in the fridge.
Shake 7.5ml chilled water, 10ml gin, 10ml lavender syrup, 20ml elderflower cordial, four drops Angostura Aromatic Bitters, and one small ice cube. Strain this into a chilled martini glass. Top up with half infused tonic, half fresh tonic. Garnish with hibiscus petals.
