Instructions

  1. Sparkling malic acid solution:
  2. Dissolve 3 flakes of Maldon salt and 2.5 g malic acid powder in 50 ml ice-cold sparkling water. This gives a salted 5% solution.
  3. Drink:
  4. Chill a flute.
  5. Shake the orgeat, riesling wine, gin and scotch with ice.
  6. Fine strain into the flute.
  7. Top with 30 ml of the sparkling solution.
