Dr. Fünke
🥃0
Shake Absinthe, Pineapple Juice, Lime Juice, Orgeat with ice. Strain into a coupe.
The Dr. Fünke isn’t just another Polynesian-style cocktail; it’s a true South Pacific classic. Created in Samoa around 1900 by Dr. Bernard Funk, who treated Robert Louis Stevenson and others, this refreshing mix of absinthe with lemonade or limeade was widely enjoyed across the islands. During the Tiki era's peak, Don the Beachcomber and Trader Vic transformed it into a grenadine and pastis highball. Here, we’ve given it an update that features a vibrant ocean blue color sure to brighten up any group of drinkers.
