Instructions

  1. Add the lime juice, demerara syrup, dark rum and pimento dram to a shaker.
  2. Add cracked ice (it matters) and shake for around 20 seconds.
  3. Pour the whole contents, unstrained, into a highball glass.
  4. Top with club soda.
  5. Garnish with a mint sprig and add a metal straw.
  6. Allspice tequila, made in advance as an alternative to the pimento dram:
  7. Leave cheap tequila to steep on cloves, star anise, nutmeg and cinnamon for a year and a half.
  8. Strain through a coffee filter.
