- Chill a coupe.
- Add the white rum, dry vermouth, Martini Riserva Speciale Bitter and lemon oleo saccharum to a mixing glass filled with ice.
- Stir until the drink is well chilled.
- Strain into the chilled coupe.
- Garnish with a hibiscus pickled onion.
- Hibiscus pickled onion:
- Take a jar of pickled onions and add 50 g dried hibiscus flower for every litre of vinegar.
- Let it infuse for 3 hours.
- Pass the vinegar through a fine strainer twice to remove the flowers, then pour it back into the jar.
