Shake Bourbon, Mint Syrup (See Notes.), Pimm'S No. 1 Cup, Lemon Juice with ice. Strain into a highball glass.
At Loyal Nine, I created a Derby Cup cocktail as a summer special. It blends elements from both Mint Juleps and Pimm’s Cups. The Bourbon, mint, and crushed ice come straight from the Julep, while the Pimm's, lemon, soda, and borage flowers are borrowed from the Pimm’s Cup. I also thought about adding Jamaican rum as a floating layer but decided against it to keep things simple for our servers.

- Combine all ingredients except soda water and crushed ice with ice and shake vigorously.
- Strain into a Collins glass filled with 2 ounces of soda water.
- Add crushed ice on top.
- Garnish with a sprig of mint and two borage flowers if they are available.
- For an extra touch, float a barspoonful of Jamaican rum such as Wray & Nephew or Smith & Cross.
- To prepare the mint syrup, steep hot simple syrup with mint leaves or muddle them in cold simple syrup and strain.
