Death in the Afternoon

Just two ingredients: 45 ml absinthe and 135 ml Champagne, built straight in a flute. Anise-forward and bubbly.

Ernest Hemingway's own recipe, written for the 1935 collection So Red the Nose and named after his 1932 book on bullfighting: absinthe in a Champagne glass, topped with iced Champagne until it turns milky.
