While searching for the perfect rabarbaro recipe, I decided to tweak the Knife to a Gun Fight cocktail. By blending Sfumato with Aperol and pairing it with a mezcal-agricole base, I created something unique. After sharing my second iteration on Instagram, Jake Parrott from Haus Alpenz mentioned that a 50:50 mix of rabarbaro and red bitter is a traditional café drink in the Veneto region, often called "mezzo-mezzo." Inspired by the cocktail's smoky and roasted flavors, I named it Dark Entries after Bauhaus’s 1980 track.
