To make the Blackcurrant Cordial, combine 1 pound frozen blackcurrants, 1 cup water, and half a pound sugar in a saucepan. Warm over low heat while stirring until the sugar melts completely. Let it simmer for 3 minutes, then incorporate the juice and zest from one lemon. Simmer again for another 3 minutes. Allow to cool fully before straining through a fine sieve. Store in a bottle and chill.
