Instructions

  1. Chill a coupe.
  2. Put the green Chartreuse, mezcal, mint sprig, Angostura bitters, pineapple juice, lime juice and maraschino liqueur in a shaker and fill with ice.
  3. Shake well until cold.
  4. Pour through a fine strainer into the chilled coupe so no mint fragments get through.
  5. Garnish with a thyme sprig.
