Instructions

  1. Chill a highball glass.
  2. Pour the egg white, simple syrup, lemon juice, Cherry Heering and gin into a shaker. Leave out the club soda.
  3. Shake hard without ice to build the foam.
  4. Add ice and shake again until cold.
  5. Strain into the chilled highball glass.
  6. Top with club soda and garnish with a maraschino cherry.
