Instructions

  1. Select a tall, narrow champagne flute.
  2. Layer four large ice cubes inside it.
  3. Sprinkle them with sugar that has been soaked in four dashes of orange bitters.
  4. Garnish by placing two strips of fresh pineapple along the sides and wrapping the ice tower with a lime peel spiral.
  5. Top off with cold medium-dry champagne, avoiding overly acidic varieties.
  6. Finish by gently floating a tablespoon of Cointreau on top.
