A few Saturdays back at Drink, a patron requested a Caipirinha variation, inspiring me to blend it with New Orleans flavors. Drawing from successful combinations of cachaça and rhum agricoles with Benedictine, like the Petition and Homere Punch, I added Peychaud's bitters and absinthe. When they ordered another round, I knew I had a winner. That night at home, I named it Casa Samba after New Orleans' annual Brazilian Carnival celebration.
