While organizing my desk, I stumbled upon a note suggesting a mix of Aperol, walnut liqueur, and Cynar. Recalling successful pairings of Aperol with nuts, particularly the Prospect Park cocktail featuring Maraschino, I decided to experiment by replacing Maraschino with walnut liqueur and switching the spirit base to Scotch for a richer nutty flavor. Inspired by Edinburgh’s history, I named this creation Canongate.
