A stirred, bittersweet drink with scotch and Aperol in equal measure, rounded out by sweet vermouth and walnut liqueur and served in a cocktail glass with a maraschino cherry. Created by Frederic Yarm in Somerville, MA, in 2021.
Frederic Yarm created the Canongate in 2021 after finding a desk note that suggested Aperol, walnut liqueur and Cynar. Aperol and nuts had worked well together before, notably in the Prospect Park with Maraschino, so Yarm swapped the Maraschino for walnut liqueur and changed the base spirit to Scotch. The name draws on the history of Edinburgh.
