Caipirinha (no added sugar & low-calorie)

A tall, lime-forward caipirinha where the sweetener stands in for sugar, so the bite of the lime and the grassy cachaça come through clearly. Cold, sharp and refreshing.

- Halve the lime from pole to pole, then slice one half into half-moons about 3-4 mm thick. Drop them into a sturdy rocks glass.
- Add the sugar-free sweetener and muddle until the lime has given up its juice. If your ice is straight from the freezer, add a splash of cold water and muddle a little more.
- Pour the muddled lime and sweetener into a highball glass.
- Pour the cachaça (kept in the freezer) into the empty muddling glass, swirl it around to collect what is left, then pour it into the highball glass. Stir.
- Crack four or five large ice cubes, rather than crushing them, and drop them in. Stir again, then top with more ice.
- Serve with a stirrer and no straw.
