Stir Mezcal, Dry Vermouth, Byrrh, Crème de Cacao with ice. Strain into a coupe.

Inspired by Marliave’s Cocktail from 1906 Louis' Mixed Drinks and its sweet vermouth variation Aime, I experimented with the gin-Maraschino-orange bitters combination to craft a new drink honoring Burdick’s chocolatier. The result was a sophisticated mezcal-cacao-Peychaud’s cocktail that matched the elegance of its predecessor.

Instructions

Mix over ice, then pour through a strainer into a cocktail glass. Finish by twisting a lemon peel over the drink.
