Stir Irish Whiskey, Dry Sherry, Angostura Bitters, Scotch with ice. Strain into a rocks glass.

I tried the Bow Street Banana, a twist on the Smokey Monkey created by Jamie Boudreau at CliQUE Bar and Lounge. It's essentially an Old Fashioned variation.

Instructions

Cut a banana into slices and sprinkle them with cinnamon sugar before caramelizing the topping with a torch. Place cloves on a plate and spray them with whiskey. Ignite the cloves using a torch, then hold your glass over the smoke to infuse it with the clove aroma. In a Yarai without ice, combine bitters, sherry, and Bananas Jameson and stir well. Strain this mixture into the smoked glass. Garnish with the brûléed banana slice.
