Instructions

  1. Chill the coupe.
  2. Add the gin, blue curaçao, lemon juice and egg white to a shaker with ice and shake.
  3. Strain the drink back into the shaker, leaving the ice behind, and shake again without ice to build the foam.
  4. Fine strain into the chilled coupe.
  5. Cut a coin-sized piece of orange zest, squeeze it over the drink to release the oils and float it in the centre.
