Instructions

  1. Put a rocks glass in the freezer beforehand.
  2. Add the ground coffee, simple syrup, Angostura bitters and spiced rum to the frozen glass and stir until the coffee is evenly mixed in. If you have no scale, 10 grams of ground coffee is about 30 ml in a jigger.
  3. Wet a paper filter in a pour-over dripper, such as a V60, and set it over a chilled glass.
  4. Pour the mixture into the filter and be patient: it takes a couple of minutes to drip through.
  5. Garnish with a lemon zest twist.
