Instructions

  1. Add the mezcal, beet juice, lime juice and agave syrup to a shaker. Use freshly pressed beet juice if you can; if the bottled juice has added acid, use a little less lime juice.
  2. Add ice and shake well.
  3. Strain into a coupe.
  4. Finish with a few drops of olive oil on top.
