Shake Scotch, Cynar, Aperol, Lemon Juice with ice. Strain into a coupe.
A customer recently requested a Paper Plane and we discussed alternatives when Amaro Nonino isn't available. He suggested Cynar as an excellent substitute for Averno or Montenegro. Inspired, I experimented with Scotch at home using Cynar and Aperol, which pair well in drinks like the Juan Bautista and Mad Max. Initially trying equal parts, a smoky single malt might have worked better, but with a blend, I found success leaning towards more spirit. Naming it after Andy Warhol’s 1960s performance space from St. Marks Is Dead, I called it Balloon Farm.
