Ingredients: 1⁄2 tsp Orgeat; 45 ml Kummel; 23 ml Absinthe; 1 tsp Cream; 23 ml Cognac; 23 ml Kirschwasser

A strong, spirit-forward mix of cognac, kirschwasser, absinthe and kümmel, softened by a little cream and orgeat. Anise and caraway lead, with a nutty sweetness from the orgeat.

The Balaklava Special No. 2 is a tribute to Balaklava, the site of the Charge of the Light Brigade, remembered for its brave but futile courage. It is credited as served by Captain Ferguson, a shipmate on a 1926 voyage around the world and formerly of His Majesty's Bengal Lancers.
