Instructions

  1. Add the lime juice, gin, Angostura bitters and egg white to a shaker filled with ice.
  2. Shake hard until the shaker is ice cold.
  3. Strain into a rocks glass filled with ice, ideally over one large chunk of ice.
  4. Garnish with a slice of root ginger or a piece of crystallised ginger.
