Wash a lime under running water. Cut two pieces for decoration and squeeze the rest into each glass. Split the ice into chunks. Roughly chop some mint leaves.
Mix sugar with chopped mint in both glasses. Muddle by pressing down on the mixture to dissolve the sugar, using a muddler or the end of a wooden spoon.
Pour pineapple juice over the crushed ingredients.
Divide rum and ice evenly between the two glasses and stir well.
Add soda water until each glass is full.
Serve with straws, a cocktail spoon, or a swizzle stick. Decorate with fresh mint leaves, lime wedges, and dried citrus slices.
