A stirred coupe of gin, green Chartreuse, sweet vermouth and Amaro Montenegro, with a pine-flavoured vodka adding a resinous note. Herbal and bittersweet. Created by Matt Jardine in 2014.

Matt Jardine had newly acquired a bottle of 66 Gilead's Pine Vodka and tried it in a number of drinks before settling on a twist on the Bijou in 2014. The pine spirit, a liqueur of herbs and an amaro with bite and spice together recall an alpine tundra landscape.
