Instructions

  1. Chill a coupe.
  2. Put the egg white in a shaker tin, then add the gin, simple syrup, raspberries and lemon juice.
  3. Dry shake without ice for 5 to 6 seconds to build the foam.
  4. Add ice and shake again for about 15 seconds.
  5. Fine strain into the chilled coupe.
  6. Squeeze a lemon zest over the surface to release its oils, then discard it. Garnish with fresh raspberries.
