Instructions

Chill a rocks glass by rinsing it with absinthe but keep the liquid inside. Place the glass in the freezer. In your shaker, combine sage leaves, sugar, and Peychaud’s bitters. Muddle vigorously. Add remaining ingredients and stir thoroughly. Remove the chilled glass from the freezer, swirl the absinthe around to coat the sides. Strain twice through a fine mesh sieve. Squeeze an orange peel over the drink and drop it in.
