Instructions

  1. Add the absinthe, lemon juice, simple syrup, Peychaud's bitters and egg white to a shaker with ice.
  2. Shake, then strain the drink back out of the shaker, leaving the ice behind.
  3. Put the drink back in the shaker without ice and shake again to build the foam.
  4. Fine strain into a rocks glass filled with ice.
  5. Garnish with a lemon zest twist and a Luxardo Maraschino cherry.
