Stir Jamaican Rum, Cognac, Sweet Vermouth, Orgeat with ice. Strain into a coupe.

Inspired by Manhattan-like cocktails featuring orgeat from "Pioneers of Mixing at Elite Bars: 1903-1933," I combined elements from both the Japanese and 1919 cocktails. Using Cognac for one part and Jamaican rum for another, to add funk and dryness, I named it the 1790 after the year tropical almond trees were brought to Jamaica.

Instructions

Mix over ice, then pour through a strainer into a cocktail glass. Finish by twisting a lemon peel over the drink.
